For now, I will just be posting a weekly menu. I hope to add more content once we all get settled into the new house.

Cholesterol and inflammation - which one should I worry about?

"The Cholesterol Myth"

This is a nice article that sums up some recent findings on cholesterol and how doc's are now backing away from the lipid hypothesis and saying that cholesterol is only a symptom of a larger problem of inflammation.  While I've read a lot about this before, this article is pretty clear and succinct.  The main idea - dietary cholesterol is not the problem, it's more about sugar and carbs, rancid fats, hydrogenated oils,  and trans fats causing inflammation that is the real culprit of heart disease.  So as the primal plan tells us, chow down on unprocessed meat, coconut oil, nuts, avocados, veggies, raw dairy, and eggs that aren't terribly overcooked (think poached or soft-boiled rather than hard-boiled or scrambled) with abandon and leave all those grains and sugars behind!

We're still recovering from colds.  I'm feeling more myself after some fun home remedies, but I'm trying to get a lot done today, so I'll keep it short and sweet - just a menu.  For me, I will not be eating the bread or potatoes, but there have been requests for potatoes and breadsticks....oh well

W - Meatloaf, sweet potatoes, brussel sprouts, broccoli, spinach (using up vegetables in fridge)
R - Eggplant lasagna, bread sticks, salad
F – Shrimp and Wild Rice Casserole, cooked carrots and peas
St – Kielbasa with green beans, potatoes, and sauerkraut
Sn – Crockpot Cashew Chicken
M – Roast Salmon, asparagus
T - CORN

Baked goods - peanut butter cookies, pumpkin pie, banana-carrot almond meal muffins
