Menu 10/27-11/2

Well, we're all sick with colds here in the house, which means soup, soup, and more soup (and less energy to prep anything fancy)!  Also, my dad is coming to visit for Halloween, and we will be having a party!  This means two things:
  1. Over the weekend we have to stick to plain, "meat and potatoes", kind of meals so that Dad will eat them.  
  2. No meal for Saturday night, but lots of party food to prepare.

So the menu for this week looks like:


Wednesday - Chicken noodle soup!  (in the crockpot - meaning we have leftovers for those in need of TLC through the week)

Thursday - More soup - Pumpkin Squash Soup and Warm Beet Salad w/ Fennel and Goat Cheese

Friday - Roasted Apple Stuffed Pork loin with Sweet Potatoes and Broccoli and Cauliflower

Saturday -  Spooktacular Halloween Party!

Sunday (Halloween) - Halloween Shaped Pasta with Tomato Sauce and Turkey Meatballs

Monday - Sesame, Cilantro Chicken Drumsticks and Sauteed Garlic String Beans

Tuesday - CORN (Clean out refrigerator night)

Baked goods - More muffins - as nephew has become a regular muffin muncher! I'm thinking banana/carrot muffins with almond flour and protein powder and perhaps an apple pie?

On a side note, due to my schedule grocery shopping on Wednesday is tough, and Friday is a better option, so menus will now start on Fridays starting next week!

Menu 10/20-10/26


Sorry for the simple layout of this post, but I'm just getting started over here.

Dinner Menu:
Wednesday - Smoked Turkey and Collard Greens

Thursday - Spicy Coconut Shrimp over Cauliflower Rice

Friday - Chicken Enchiladas Verde; Mixed green salad with Jicama, Yellow Peppers, and Red Onions

Saturday - Clean Out Refridgerator Night (CORN)

Sunday - Beef Stew with Crusty Bread

Monday - Roast Salmon with Asparagus; Green Salad

Tuesday - CORN

This week's menu (and I'm sure many others) relies heavily on Pam Anderson's Perfect One-Dish Dinners.  This is my new favorite cookbook and many of the recipes can easily be adapted to be primal.

Since I appear to no longer be allergic to eggs*** (an allergy that cropped up and disappeared very randomly), this week for breakfasts I will try almond flour and vegetable puree pancakes as well as making a basic frittata with the leftover turkey, greens, and onions.  For lunches we normally eat dinner leftovers.

Also on the menu, is making the monthly batch of Toby the dog's meatloaf.  He eats a special, homemade diet, due to his kidney and digestion problems.

Finally, in honor of the lovely fall pumpkins available, and by special request of my sis-in-law, I'll also be making a pumpkin pie (not primal, but oh well) and trying out a recipe for almond flour pumpkin muffins, that I hope my carb-loving, vegetable eschewing nephew will enjoy!

***Edited comment -- never mind, still allergic...seems I can eat them once a month or so, but that's it.  Sigh :(
